While I was out in Vancouver last week, we had the opportunity to try out some really extremely fresh locally caught salmon. It was amazing. Here’s a simple recipe that you can use to prepare your fish. Based on the same simple steamed ginger scallion fish recipe that I posted awhile back, this one spices it up a bit with garlicky black bean sauce and optional hot peppers. If you can’t find salmon at your local fish market, you’re fucked – just kidding you can use this recipe with pretty much any type of fish.

Steamed Fish Ingredients
1 tablespoon of thinly sliced ginger
1 tablespoon of thinkly sliced garlic
1 tablespoon of rehydrated black beans
1 scallion sliced thinly
1 lb of Salmon or any other fresh fish.

steamed salmon with black bean sauce recipe Prepare by rinsing salmon with cold water then sprinkle salt all over surface. Set aside for 10 mins. In the meantime, slice the ginger, garlic and scallion. For the scallion flowers, take a section of the white part of the stalk and then take a sharp knife and carefully slice down 3/4 of the length to create the ‘petals’. Place this scallion flower in a bowl of water to allow it to expand. Rinse the salmon with cold water and place on a heatproof dish. Sprinkle salt, add ginger, garlic and black beans. Steam for 10 mins or until fish is cooked through. Add the sliced scallions on top. Pour 1 tablespoon of olive oil into a frying pan and heat on high for 1 min. Just as the oil begins to smoke, remove from the heat and evenly pour hot oil over the fish. Done!
