Jacques Torres is one of my idol pastry chefs and when it comes to chocolate deserts, he is one of the pioneers in the field (I am still saving up for a class at the French Culinary Institute here in New York) Anyhow on the way to a gallery opening, Sing and I stumbled upon his factory / cafe down on Hudson (off of Varick) in the west village. It’s kind of a strange space with open views of the factory and the workers:

The inside is a dark cafe decorated with red velvet drapery and industrial cast iron sculptures – basically your 80s Goth industrial look. I think it’s a little over the top in my opinion and don’t’ think I could just hang out there, but it was the chocolate that we came to check out. We tried out the dark chocolate coconut truffle and the earl Grey tea flavored truffle.

The coconut chocolate truffle was ok but not overly impressive. But the Earl Grey was very nicely done and the flavors of the tea really blended well with the chocolate – who knew that a tea flavoring could combine so well. They had plenty of others that I would like to go back to try someday such as the grand marnier chocolate truffles. Mostly these were your traditional flavors and were well done and nicely displayed. For something a little more on the edge for flavors, be sure to check Chuao Chocolates of San Diego. She’s like the Ben and Jerry’s of Chocolate Truffles mixing some great wild new flavors.
