Homemade Pancakes Recipe – Easy!
I need to admit that I have an obsession with pancakes. I like the ones at the greasy diner but the instant pancake mix / Bisquick just doesn’t do it for me. I don’t like them too airy, nor too chewy, but just light enough so you don’t need a knife to cut into them. Recently, I’ve had the time to experiment with all types of recipes, and I’ve finally think I’ve come across an easy fool-proof recipe that works. My friend Olivier has upped the bar with his soughdough pancakes but that’s another story for another time. I plan to get back into breadmaking and baking breads pretty soon, so look out for those posts.
Plain Homemade Pancakes Recipe
(makes 4-5 pancakes)
1 cup all-purpose flour, stirred or sifted before measuring
1.5 teaspoons baking powder
1/2 teaspoon salt
1 egg, slightly beaten (all the egg white and half of the egg yolk.) Double the recipe? Just use 1 whole egg.
1/2 cup milk
1/4 cup of heavy cream
1 tablespoon melted butter
Sift together the flour, baking powder and salt in a bowl. Combine the egg, milk, heavy cream, and melted butter in a separate bowl, then mix to the flour mixture. Hand mix to ensure all flour has been dissolved but not so much to cause lots of bubbles. Pour about a tablespoon of olive oil on a med-high skillet and then pour out about 1/4 cup of the batter. Flip when the sides begin brown. Serve with syrup and butter. Enjoy!
