Southern Red Velvet Cake Recipe by Food TV

I wrote a lot about Tiramisu over the past few weeks but out here in New York (at least in Harlem) it’s all about the red velvet cake. What is red velvet cake? For many, Red Velvet cake is a wonderfully sweet and smooth cake with Southern roots. There’s also the urban legend from the 1940s where a patron of the Waldorf Astoria asked the chef for the recipe for Red Velvet Cake. She was given an index card with the recipe for the Red Velvet Cake and a bill for $350. After failing to fight the bill in court, she mailed the recipe to every publication and every friend she had in order to “spoil” the Waldorf Astoria’s secret recipe for the Red Velvet Cake.

In any case I thought I would try it out at one of the fine cake making establishments in Harlem: Make My Cake (they have 2 locations and today I visited the one up on Adam Clayton Powell Blvd). Pretty cool name by the way. Inside at the counter we saw postings on the bulletin board for “Fix my computer” company. Maybe there should be a “Do My Laundry”, “Wash My Car”, or “Walk My Dog” company? ha ha.

In the shop, they sell all sorts of cakes including a great display of cup cakes:

I would have to say that this cake is one to die for – it’s rich, smooth and very moist. The cream cheese frosting is a little overwhelming on the sweet side but the crusty frosting gives a nice crunchy texture.

My next stop is the famous Cake Man Raven down in Brooklyn. I heard he’s got the best Red Velvet Cake.

    I love Red Velvet Cake. Magnolia and Buttercup Bakery both make Red Velvet cupcakes as well as Red Velvet cake. I’ve heard that same story told in regards to the cookies sold at Neiman Marcus! It seems to be an urban legend.

    Although Make My Cake has a good red velvet cake, the best is in Brooklyn at CakeMan Raven on Fulton Street. The best sweetpotato cheesecake I’ve ever had came from Make My Cake.

    Real Red Velvet cake does not have a cream cheese frosting!!!! You make a paste like you would if you were making a thick white sauce and add it to a vanilla buttercream

    stopped by yesterday
    ordered the red velvet (yummy) and the lemon cake. .
    very good. alsot ordered the chocolate frosted chocolate cupcake. . (yuck what happened)all day
    noticable difference in freshness – i dont understand. . not sure if i want a hit n miss scenario with the freshness issues. .

    Yes both Cakeman Raven and Make my Cake have the best Red Velvet Cakes!!! Cake Man is my favorite of the two. But I ordered a Red Velvet Cake from a small Dessert Catering Company in brooklyn called mySWEETS by Arie & Sarah and it was the best ever!!! It was so good and very inexpensive. I was referred by a friend, mysweetsbyas@gmail.com.

    who was that that said that you don’t use cream cheese frosting on a red velvet cake? whomever said that, must be from south dakota or something. no offense. every since i can remember, my great grandmother has been making red velvet cake with a cream cheese frosting and that’s that!

    Cake Man Raven’s red velvet cake is the best. hands down.Check out his website and see why every celebrity, politician , athlete and average joe schmo order from him. He is now selling in Applebees also. His other cakes and pastries are excellent also.

    I ordered my sister’s wedding cake from Make My Cake in June 2006. Ever since then, my mother, my aunt, two sisters and I have been fantasizing about their Red Velvet cake! It was heaven on the tongue! My mother, aunt and one sister are big time, high-end bakers and they are highly critical of most commercially-bought baked goods. Make My Cake’s Red Velvet got their whole-hearted thumbs up. The cake texture was nice and solid, not crumbly. The color was a divine, rich, sinful red. (Think bordello red!) The flavor had that perfect touch of cocoa, not too much and not too subtle that you could barely sense it. The frosting was excellent. I highly recommend it!

    Sorry to bust the bubble of anyone who though, said , wrote , assumed or dreamed that Cakeman’s red velvet was/is better. Sorry to hear you might need to have that head examined. Seriously though, Make My Cake is easily the best red velvet cake on the planet. I live near this spot and work near cake man raven’s spot. Although he does his thing as well, it’s not as tasty , nor moist as M.M.C(we’ll refer to this acronym for Make my cake for the rest of this review). They also make cup cakes but the sliced cakes make you want to” slap ya momma”. They cost about $5 bucks a slice and like 50+ for 7″ and better. So you think your favorite baker can mess with this spot, go ahead. I dare you. Don’t say I didn’t warn you not to waste your time. This cake is sick!!! Everyone that I have given a piece to gies nuts over the moisture , texture and pure taste of this treat. If you don’t like this cake , something is wrong with your taste buds..
