What the Pho (pronounced “fuh”)! has got to be one of the funniest names for a restaurant EVER. Well, I’m glad someone is having fun in the city of Bellevue, WA. Out here in Bellevue, all I’m seeing is endless suburban sprawl, a metro center with bland office buildings and shopping malls. But getting back to Pho – in case you don’t know what the pho pho is – it’s a Vietnamese Noodle dish with white rice noodles in clear broth, with thin cuts of beef (steak, fatty flank, lean flank, brisket). Variations featuring tendon, tripe, meatballs, chicken leg, chicken breast, or other chicken organs (heart, liver, etc.) are also available. The meats are thinly sliced and served over the hot broth noodles and are cooked in the process. Fresh lime juice, basil, onions, and bean sprouts are also mixed into the broth to add extra flavor. It can be spicy, sweet, or salty to your liking by using a variety of sauces such as hoisin sauce, fish sauce, and the Thai hot sauce Sriracha.
Apparently What The Pho was originally in Huntington Beach, CA but didn’t do too well. Here in Washington, What the Pho is doing quite well with a 2nd location to be opened in Mill Valley soon. As for the taste, I found the Pho quite good. The broth (which is the litmus test for a great bowl of pho) was a litte on the sweet side for me, but after adding the Sriracha it was perfect.
What the Pho also serves non noodle / rice based Vietnamese dishes such as Thit Nuong (Charbroiled Marinated Pork) – I love this dish, and Xao Do Bien (Squid, Sea Scallops and Black Tiger Shrimp stirfried with vegetables served with rice) There is also a vegetarian menu as well – hey this is Seattle afterall.
