Fresh La Mian – Pulled Noodles

Tried a La Mian (Hand Pulled Noodles) hole in the wall place in Zhong San near our hotel. Do you notice what the white hats the guys are wearing? These are ethnic Chinese from the North West Xin Jiang region of China. Xin Jiang province is bordered by Tibet, Qinghai, Gansu, Mongolia, Kazakhstan, Kirghizstan, Uzbekistan, Tadzhikistan, Afghanistan, Pakistan and India so many of the people have Islamic / Muslim roots and blend some of this into their cooking. I ordered a Zha Jiang Mian 炸酱面 which is usually a black soybean garlic onion sauce but in this situation they made a twist on it and included a tomato base with the addition of carrots and peas (probably the frozen variety). It was a little weird but nonetheless still good. The noodles were right on though – totally hand made before your eyes and boiled al dente. Funny enough the guy who was pulling the noodles was a little short so he had to stand on a stool to get the height to drop the noodles to their full length. Also they made some great Shou Dao mian – knife cut noodles which is made by cutting slices of pasta from a block of dough right into the boiling hot water (see photo above). These noodles are thicker and chewier. Way to go Zhong San!
