Home Style Dan Dan Mian
One of my favorite noodle dishes is Dan Dan Mian ( 担担面 ). Dan Dan Mian is a classic Si Chuan dish that consists of ground pork in a spicy garlic peanut sauce along with slivers of cucumbers and mushrooms. Yum! How can you go wrong with that? A great place to grab a bowl is Fu Zhou Noodles on East Broadway where the noodle chef master hand pulls a fresh batch of noodles upon ordering. You can also make your own pretty easily by cheating and picking up a jar of the sauce at any local Chinese market like Dynasty or Hong Kong Supermarket in Chinatown. The noodles you can also purchase (I have no idea how nor the skills to pull my own noodles LOL!)
So the ingredients are:
1) 1 package of Chinese flour noodles (these should be thicker than spaghetti noodles and thinner than Udon) Look for the fresh noodles that are moist and sealed tight – not the dry variety.
2) Bottle of Spicy Si Chuan Sauce
3) 1 Cucumber
4) 1 Package of firm tofu
5) Enokitake Mushrooms
6) 1/4 lb. Ground Pork or Ground Turkey
Slice and fry your firm tofu and set aside. Fry ground pork till fully cooked and add in 2 tablespoons of the Si Chuan sauce. Stir fully. Prepare the noodles, drain and place in a bowl. Spoon in your ground meat, add your sliced tofu, sliced cucumbers, and enjoy!
