Our beef comes from naturally raised genetically pure Black Angus cows that are humanely raised in the USA. They graze freely without exposure to hormones or antibiotics.
Our pork is Berkshire.
All of the fish and shellfish are either caught in the wild or raised organically.
Our vegetables are chosen for freshness and consistency. Most of our mushrooms and vegetables are certified organic. In those instances where organic options are not available, we are working with a friend/chef turned organic farmer in upstate NY to grow our own.
In spite of these efforts there are still a few essential items we are still trying to source organically and/or locally.
