Huevos Rancheros Recipe
The next time you wake up with a hangover or find yourself harking for a hearty brunch, fire up some homemade huevos rancheros. It’s easy and it’ll do the job – promise. Here’s my modified recipe.
Huevos Rancheros Recipe (modified)
Eggs (duh)
Corn tortillas
Salsa
1 tomato
A can of chipotle peppers
2 cloves garlic and/or 1/4 onion diced
Optional
Queso Blanco (Mexican White Cheese)
Black Beans or Refried Beans
Make the salsa first by dicing up your tomato, garlic and onion. Open your can of chipotle peppers (I prefer La Morena brand. I used Goya recently and as much as I respect Goya products, the chipotle peppers are a bit of a joke. Listed in the ingredients is sugar!) and slice 3-4 times. Sauté onions and garlic, then add the tomatoes and chipotle peppers. Add salt to taste.
Traditionally huevos rancheros are made with refried beans, but I prefer black beans on the side. Of course making the black beans takes some time and pre-planning so if you are in a pinch, just buy a can of refried beans at your local deli. Otherwise, check out my recipe here.
Pour a bit of olive oil into a frying pan, lightly brown the tortillas till crispy and golden brown. Remove tortillas, crack 2 eggs and fry sunny side up. Serve eggs over the tortillas. Top with beans, salsa, and cheese. Bon Apetito!
