Jamaican Jerked Chicken

My Jamaican coworker has made fun of me a few times cause I’ve totally screwed up making Jamaican Jerked chicken in the past, but this time around I think I’ve figured out a fool proof method. I’ll fill you in on the ways NOT to screw up and save yourself from breathing in noxious fumes (more on that later).

First off, we cheated. We used a premade Jamaican Jerk Sauce. But so does my coworker. She says she gets her sauce called Walkerswood from Jamaica. But here’s a jerked chicken jamaican recipe recipe for those hardcore types from Diana’s Recipies :

Jamaican Jerk Sauce Recipe

1 tablespoon Ground allspice
1 tablespoon Dried thyme
1 1/2 teaspoons Cayenne pepper
1 1/2 teaspoons Freshly ground black pepper
1 1/2 teaspoons Ground sage
3/4 teaspoon Ground nutmeg
3/4 teaspoon Ground cinnamon
2 tablespoons Garlic powder or fresh
1 tablespoon Sugar
1/4 cup Olive oil
1/4 cup Soy sauce
3/4 cup White Vinegar
1/2 cup Orange juice
1 Lime juice
1 Scotch bonnet pepper (habanero)
3 Green onions — finely chopped
1 cup Onion — finely chopped

jerked chicken jamaican recipe Anyways start off with about 1-2 lbs of Chicken thighs, drumsticks or if you are more into white meat toss in a few chicken breasts. Mix only a tablespoon of the sauce with your chicken. This is where I went wrong the first time – the sauce contains lots of chili oil and when you cook it, it can smoke and produce noxious fumes that will make you and your neighbors cry and cough for several hours. Not fun.

Next we added in a few tablespoons of Worchester sauce, Mirin and a dash of honey. Marinate and let sit for about 15-20 minutes in the fridge.

jerked chicken jamaican recipe Preheat an oven to 375F, then use a cast iron or if you’re cool an anodized aluminum pan and pan fry / sear each side of the chicken for about 5 mins. Move entire pan into the oven for 30 minutes. We like to toss in a few sliced rings of red onion at this stage to get more of a sweeter carmelized taste.

That’s it, it’s pretty easy. But remember to go easy on the sauce. You can also grill the chicken over a BBQ grill which is preferable since you are going to be outdoors and don’t have to worry about the fumes. Or you can also use the broiler in on your oven if you have one as well. Enjoy

    Walkerswood is the best jerk rub out.Their whole line of jerk bbq sauce, hot sauce , etc. When you use that brand you just have to use onion powder, garlic powder, black pepper , thyme and little seasonsed salt or regular salt cuz the rub has all the necessary spices. You can also marinate your chicken in your favorite bbq sauce along with the rub and grill.Simply delicious.
